Recipe - Roasted sweet potatoes

- 2 large-ish sweet potatoes
- Avocado oil
- Salt, pepper and herbs

Preheat oven to 400 degrees F.

Wash and scrub your sweet potatoes thoroughly to remove all dirt. Dry sweet potatoes (I leave the skin on) and dice them into 1/2 inch cubes. Line a baking sheet with parchment. Toss the sweet potatoes with avocado oil (enough to coat all pieces), season with salt, pepper and your herbs of choice.

Roast for 15 minutes. After 15 minutes, mix the cubes around gently, add oil if you need more (you should see brown and crispy sides). Roast for another 15 minutes, and done!
