Journal - Day 18 of January 2018 Whole30

Breakfast: two egg frittata muffins (protein & veg), guacamole (fat).
Lunch: leftover Whole30 chili, coleslaw, 4 strawberries (about 4 ounces).
Dinner: leftover pork loin, romaine salad with balsamic, marinated onions, small Fuji apple and almond butter.

What went well today: Went for a lunchtime walk, got some sun and warmth.
What could have gone better: Could have cooked some chicken.
What I'll do tomorrow: Cook that damn chicken lol

NSV: I'm not feeling SO drained every morning, I don't feel like I need coffee (although I still miss the taste).

I can't really figure out what to do with those chicken breasts, so I think I'll just either bake them or cook them in the instant pot, then portion and freeze. Then I know I'll have some pre-cooked protein to take out and dress, much like I'm doing with the pork loin. I'm thinking of getting the vegetable platter from Costco to use some as raw eats, and some in stir fry. Especially since I do still have a steak left. It might make a nice beef-broccoli kind of deal with cauliflower rice.
