Recipe - Quick and Easy Shrimp Scampi (Whole30)

This is just a basic how-to, I don't really have quantities for this one.

1.5 pound bag of medium frozen pre-cooked deveined no shell shrimp
0.5 cup of ghee
6 cloves of garlic chopped
Salt and pepper (I used Trader Joe's Onion Salt)
1 - 10 oz bag of frozen broccoli (Birds Eye)
1 - 10 oz bag of frozen riced cauliflower (Birds Eye)

Warm ghee on medium heat until melted (I keep mine in the fridge) with garlic until fragrant and bubbly, about 7-10 minutes. While the garlic and ghee are having a party, thaw the frozen shrimp in a colander in the sink with running cold water. Toss the shrimp around a few times so they all defrost evenly. Drain well (you don't want to water down your sauce). Add shrimp to the ghee and garlic to warm through along with a little bit of salt and pepper. Microwave a bag of frozen broccoli and drain well. Microwave a bag of cauliflower rice. Plate with half the cauli rice, half the broccoli and 1/3 of the shrimp scampi. Be sure to include some ghee as your healthy fat, and drizzle all over everything. I sprinkled some Trader Joe's onion salt as well. This made two servings as well as shrimp leftovers for another meal (could use with zucchini noodles).

- ghee (fat)
- broccoli and cauli rice (veg)
